Summer Menu 2026 at Baltschug Kempinski Moscow
Moscow, May 2026 – With the start of the season, Café Kranzler and its legendary summer terrace at Baltschug Kempinski Moscow once again become a destination for lovers of scenic views and vibrant cuisine.
The Kranzler terrace is the perfect setting at any time of day – whether for a morning coffee with a croissant, a business lunch or a romantic dinner as the embankment lights begin to twinkle at dusk.
This year, Chef Andrey Kagokin and his team have created an updated summer menu in which familiar seasonal ingredients are reimagined in unexpected combinations, with a culinary journey spanning from the Mediterranean to Southeast Asia.
‘When creating the menu, we were inspired by the unique atmosphere of Baltschug Island – where the rhythm of the city meets a sense of resort-style relaxation’, comments Andrey Kagokin. ‘We have introduced more Asian notes, retained guest favourites and, of course, focused on seasonal vegetables, fish and seafood.’
The gastronomic experience begins with a selection of cold and hot starters that set the tone for lunch or dinner. Highlights include ceviche of Far Eastern scallop with tuna and yuzu sauce, tuna tataki, the ‘Kamchatka’ roll with crab and avocado, and foie gras pâté on charcoal brioche. In the salad selection, the prawn, mango and edamame salad stands out.
The summer soup collection offers a choice between refreshing Russian classics and vibrant Eastern flavours. The signature ‘Baltschug’ okroshka with beef tongue (served with kvass or kefir) is presented alongside a velvety gazpacho with crayfish tails and a rich Tom Yam Ka Ti Thale with seafood.
For main courses, the chef presents well-loved favourites with a refined interpretation. Braised veal cheeks are served with delicate mashed potatoes, while pike patties are accompanied by an elegant celery cream. For white fish enthusiasts, sea bass is paired with baked carrot purée and a light lemon foam. The legendary ‘Baltschug’ beef stroganoff and the traditional Wiener Schnitzel remain on the menu for those who prefer timeless classics.
The dessert selection features new creations with distinctive names and flavours, including the ‘Golden Triangle’ millefeuille with sheep’s milk cheese and lavender cream, the ‘Pineapple’ dessert with champagne mousse, the ‘Rose’ dessert with white chocolate and raspberry lychee sauce, a heart-shaped strawberry dessert and the ‘Pear’ dessert with vanilla mousse and spiced compote.
Refreshing homemade lemonades and signature cocktails provide the perfect accompaniment to lunch or dinner. For breakfast, guests may enjoy a wide selection of over a dozen varieties of coffee and tea, as well as freshly squeezed juices.
The new summer menu is available at Café Kranzler, on the summer terrace, in the Lobby Lounge Bar and via in-room dining.
